Ok, SuperBowl Sunday - it's a day to be a cheerleader, a coach and a critic - all from the couch with a cocktail in hand. We did just that while munching on Texas style goodies. It takes lots of energy to root for the underdog so it's important to keep the stamina up with things that are stuffed.
I love poppers so this was an attempt to 'lighten them up' and we washed them down with a tart, refreshing "Health Elixer Cocktail" (veggies and juice -- how healthy!)
Stuffed Jalapenos and Mushrooms
1 lb. ground turkey
1 pkg bulk sausage (sage)
1 pkg cream cheese
1 cup shredded gouda
1 cup lowfat grated mexican mix cheese
12 jalapenos
18 mushrooms
Clean mushrooms and remove stems. Half and de-seed/vein the jalapenos. Roast the jalapenos for about 15 minutes in a 350 oven.
While they are roasting, assemble the filling. Fry the turkey and sausage in a large saucepan until cooked and crumbled. Drain. Mix the meat into the cream cheese and mix in other cheeses as well. Salt and Pepper to taste.
Fill the mushroom caps and jalapeno halves with the mixture. Place on a cookie sheet and bake at 350 for about 20 minutes or until all bubbly and yummy.
"Health Elixer Cocktail"
1oz vodka
3 oz pomogranate juice (unsweetened)
4 oz club soda
lime
Pour it all over ice and squeeze your lime on top.

Rosies Bday
Yesterday was my sweet friend Rosie's birthday. We met down at our favorite wateringhole for some thirst quenching beverages. I wanted to make it a little more special so I baked her a cake. As usual, my cooking/baking conquests start by seeing what I already have in my over stocked pantry. I love to use up my stash because I really can't stand throwing things out that have overstayed their welcome. So, with a bottle of Muscat Canneli (a wine I would not drink on it's own) a yummy bundt cake was born.
Wine I Won't Drink Cake
1 box Yellow Cake Mix
4 eggs
3/4 cup of oil
1 small box of orange jello
1 cup of 'wine you won't drink'
6 oz frozen limeade concentrate
1/2 cup sugar
Mix together cake mix, eggs and oil. In a small saucepan, mix together 3/4 cup of wine with box of jello, heat and stir until dissolved. Remove from heat and cool. Once cool, beat into cake mixture for about 3 minutes.
Pour this into a well greased bundt pan and cook at 325 for about one hour or until toothpick comes out fairly clean.
While you wait for the cake to bake, combine the remaining 1/4 cup of wine with the limeade concentrate and sugar, stir until blended.
As soon as the cake comes out of the oven, poke it all over with a skewer. Spoon some glaze over it, let it soak in. Do this until all the glaze is absorbed into the cake.
Let cake cool and invert on to serving dish. Dust with powdered sugar.
Enjoy!
