SuperBowl Sunday Texas Style

Ok, SuperBowl Sunday - it's a day to be a cheerleader, a coach and a critic - all from the couch with a cocktail in hand. We did just that while munching on Texas style goodies. It takes lots of energy to root for the underdog so it's important to keep the stamina up with things that are stuffed.

I love poppers so this was an attempt to 'lighten them up' and we washed them down with a tart, refreshing "Health Elixer Cocktail" (veggies and juice -- how healthy!)

Stuffed Jalapenos and Mushrooms

1 lb. ground turkey
1 pkg bulk sausage (sage)
1 pkg cream cheese
1 cup shredded gouda
1 cup lowfat grated mexican mix cheese

12 jalapenos
18 mushrooms

Clean mushrooms and remove stems. Half and de-seed/vein the jalapenos. Roast the jalapenos for about 15 minutes in a 350 oven.

While they are roasting, assemble the filling. Fry the turkey and sausage in a large saucepan until cooked and crumbled. Drain. Mix the meat into the cream cheese and mix in other cheeses as well. Salt and Pepper to taste.

Fill the mushroom caps and jalapeno halves with the mixture. Place on a cookie sheet and bake at 350 for about 20 minutes or until all bubbly and yummy.


"Health Elixer Cocktail"

1oz vodka
3 oz pomogranate juice (unsweetened)
4 oz club soda
lime

Pour it all over ice and squeeze your lime on top.
